I adore carrots. They keep for so long in the fridge, they’re inexpensive, and they can go in just about any dish. And because they’re so familiar, I think they have a great capacity to surprise you when you treat them with a little elegance. Thinly slicing them and combining them with sweet raisins, buttery olives, and rich almonds is one of my favorite ways to do that.

Serve this salad with any number of things—a bowl of hummus, a pot of rice, and a pile of greens for a delicious vegan meal, or alongside grilled sausages and mashed potatoes for something a bit heartier. Really it’s like a great pair of jeans that can go with anything (this is all the fashion advice I can offer).

Make the salad:

Place the olive oil, lemon juice, honey, and salt in a large bowl and whisk well to combine. Add the remaining ingredients, stir well to combine, and serve immediately.
