Every time I think Mama Cozzi has thought up of every single pizza I could ever desire, this staple ALDI brand comes up with a new flavor that tickles my taste buds.

Right now, ALDI is selling Mama Cozzi’s Thin Crust Loaded Potato Pizza, and if you’re looking for a fun appetizer, easy dinner, or brunch offering, run, don’t walk to your nearest ALDI to stock up.

What I Love About Mama Cozzi’s Thin Crust Loaded Potato Pizza

If you combine two amazing things—loaded baked potatoes and pizza—into one dreamy dish, that’s what this is.

This “here today, gone tomorrow” offering is just $4.99 for a 14-ounce pie that starts with a delicious Mama Cozzi's thin crust. Then, it’s smothered in a cheddar and garlic cheese sauce, topped with mozzarella, and studded with delicate bits of smoky bacon and tiny, perfectly cubed potatoes. It’s got a touch of oregano, and it’s so, so luscious.

While I had it for dinner one recent weeknight, it would be the perfect appetizer or brunch addition, right at home amidst a mix of quiches and coffee cakes. The little ones in a family will find it more fun than scrambled eggs (but maybe not as fun as chocolate chip pancakes). 

It also would be great as an offering (peace or otherwise) to any teenage guests or family members who are visiting or hanging out. 

How I Serve Mama Cozzi's Thin Crust Loaded Potato Pizza

The pizza works as-is, but if you want to upgrade it, add dollops of sour cream and sprinkle on some chopped fresh chives. For more protein, toss on some shredded chicken before you put it in the oven.

The best way to cook this is on a pizza stone, but if you don’t have one, you can cook it directly on the middle rack of your oven. Alternatively, I recommend heating up a cookie sheet when you preheat the oven (like you do when you use a pizza stone). Take it out (carefully), then spritz a bit of olive oil on it before you slide the pizza on the sheet and return it to the oven. That way, the crust is nice and crispy.
